Scout opens in Thompson hotel
Josh Henderson's Huxley Wallace Collective has opened Scout in the new lux Thompson Seattle hotel. It's a true Pacific Northwest classic complete with vintage Boy Scout mugs, blue plaid and more kitschy accents. A rooftop bar, The Nest, caps off the new hotel with hand-carved blocks of ice.
The restaurant features table-side cards with freshly shucked oysters, blended cocktails and some hot dishes. It will be open for breakfast, lunch and dinner. On the menu is salmon, local produce, burgers, pancakes and club sandwiches.
