Chef/Owner, Shota Nakajima of Northwest Kaiseki restaurant, Naka, has added three, prominent industry professionals. Dustin Haarstad, formerly of Canon and CEO and Founder of Blind Tiger Cocktail Co. leading the cocktail team that includes Ryan Lobe from Rumba and Sean Dumke of Knee High Stocking Co. and Witness.
The talented team will be tackling the entire spectrum of spirits, but with a definite focus toward Japanese whisky (many of which are not available in the U.S.), single malts, Japanese highball options, and some molecular “culinary cocktails” that will be both “strange and engaging” and only available in limited quantity. In addition, Dustin has found a resource for an uncommon Japanese beer called Echigo, alongside a dedicated tap in the bar from local Seattle favorite, Holy Mountain Brewing Co.
later this fall the team will be offering tableside cocktail service, which will include hand carved ice balls and diamonds, along with high end Japanese whisky.
